The great potential of Thiery was discovered when after completing high school he started a two-month training as a kitchen commis in a 5* hotel in the North of Mauritius. 

Thiery was then encouraged and sponsored by his peers to develop his talent and graduated with a Professional Certificate of Education in Food Production. His career was then launched and Thiery started to develop his passion for food and the art of cooking.

From then on Thiery gained several experiences and perfected his skills in the most renowned hotels and restaurants of Mauritius among which La Clef des Champs Gastronomic Restaurant, Labourdonnais Waterfront Hotel, Hilton Mauritius Resort & Spa, Four Points by Sheraton and Heritage Le Telfair.

His talent has been recognized by his peers of Les Toques Blanches and Les Disciples d’Escoffier.

He joined Le Cardinal Exclusive Resort in April 2017 with the ambition to promote its restaurant La Table du Cardinal and turn it into an unmissable Gastronomic address in the North of Mauritius. His Fusion Cuisine highlights the different flavors of Mauritian local products and also combines a mix of International premium products which will transport you through a culinary journey.
